On the Menu!

Welcome to my very first blog! I am glad you decided to come and check me out! Please add yourself as a follower and keep up to date on what's going on in my kitchen!! I am going to try to keep up with this every day, so we will see how good I do!

So I love to cook. It is a stress reliever for me! When I am upset or angry, I bake something. Or just bored or stressed. So there is always a reason to bake! Don't get me wrong, I bake when I am happy too! I just love doing it! I especially love baking - cakes, cupcakes, mini pastries (I have spoiled the girls from pool league with these!) bars, all kinds of things. I am hoping to get pictures for every recipe I use and hoping to get the recipe on here for each of the pictures I have! So enjoy and please send your own recipes as well! I love new recipes!

Tonight's menu: Breakfast for Dinner. Chopped steak and eggs, cheesy hashbrowns and biscuits! YUM! I did find an amazing cheesy hashbrown recipe I will post! Off to peel potatoes!

Ok, I found this recipe on another blog - Deep Dish South - check it out if you are a food lover! I love them, YUM!

Ultra Cheesy Hash Brown Casserole

From the Kitchen of Deep South Dish



1/4 cup of butter

1/2 cup finely chopped onion

1 can of Campbell's condensed cream of chicken

2 cups of shredded cheddar cheese

1 cup of sour cream

1 teaspoon of salt

4 turns of the pepper grinder

1/4 teaspoon of Slap Ya Mama, or your favorite

Cajun seasoning, or to taste

1 pound bag of frozen shredded hash brown

potatoes, slightly thawed



Preheat oven to 350 degrees. Prepare a 9 x 9 inch glass baking dish with butter or non-stick spray.



Melt butter in a large skillet over medium heat, and saute the onion until soft, but not browned. Turn heat to low and stir in the soup, cheese, sour cream, salt, pepper and Cajun seasoning, until well blended. Remove skillet from heat and add the shredded potatoes; mix well. Taste and adjust seasonings; turn out into prepared baking dish.



Bake at 350 degrees for 40 to 45 minutes, or until hot and bubbly.
