Homecookin for the weekend!

So, EVERY day isn't exactly working for me on this blog, what can I say? Got busy yesterday! I was having baking withdrawals so I made a nice big batch of peanut butter cookies, I LOVE peanut butter cookies. I think I have the best recipe ever. I honestly cannot remember where it came from, but I am sure it was from my mom or grandmother. Anyhow - that recipe is below. I didn't end up making the homemade chicken noodle soup - got busy and just did not have time. This weekend I have a couple of things in mind. The old man likes good home cookin. Fill your belly stuff. So we are doing s shepards pie I think tomorrow night. I have searched high and low for the perfect shepards pie and I guess I won't know which one is good until I start making different versions. Of course, once we find a version of a recipe we love, we don't go looking for more do we? Shepards Pie is pretty basic. It consists of some kind of ground meat,(most of the time it's beef) mashed potatoes and some kind of vegetables. Actually when I was younger, it was just the ground beef covered with mashed potatoes and then cheese on top. Which was fine too. I like to add corn and peas to mine. Then for seasoning, the options are endless. You can do garlic and onions, some people do Worchestershire sauce and some people do ketchup. I season the meat with salt and pepper, and of course, my Tastefully Simple seasonings - Onion Onion and Garlic Garlic. The Mashed taters will get salt and pepper and milk and butter and then there will be ketchup on the side, as not everyone in my family loves ketchup. The the recipe is simple: potatoes - peeled and mashed. Eyeball the amont, depending on how many you are serving. 1 lb ground beef (unless you are feeding a lot, you can use 2 lbs), frozen veggies, canned veggies, however you choose to do it. Layer beef, veggies and put potatoes on top. Sprinkle some shredded cheddar on top and bake. I haven't met too many people who did not like this. I do know that where I waitress, at Planeview - the owners are Dutch and they do a Dutch version of this - ground beef, mushrooms, onions, bacon, ketchup, mashed potatoes and get this - peaches. Yes, peaches. Everyone turns their nose up at that but let me tell ya, it is yummy. I know I love it. And I cannot pronounce the Dutch name for it! Other thought this weekend involved Tater Tot casserole or meatloaf.....we will see how that goes.

Recipe for Peanut Butter cookies
2 C sugar
2 C brown sugar
2 C butter
4 C flour
4 eggs
2 C peanut butter
2 tsp vanilla
2 tsp baking soda

Cream together sugars, eggs, butter, peanut butter, vanilla. Mix well. Add baking soda. Add flour and mix in grdually. Drop on greased cookie sheet and bake for 10-12 minutes. When cookies are done and still soft, press a fork in the middle so the tines make lines on the cookie and repeat crossways so you get a checkered patttern on the cookie. I will take a picture:-)
