So like I said, I would TRY to write every day but life gets away from us. Yesterday my children were both sick, vomiting all day, so I was with them all day. Didn't make any super, they were ok with crackers on their poor tummies. So tonight I have to work for a few hours so I will be making dinner early and the kids can warm it up. Great thing about teenagers, they can fend for themselves if needed. I was thinking pasta but thought better of it. My daughter is still feelin kinda icky so I was thinking this calls for homemade chicken noodle soup. My grandmothers recipe to be exact. I have NEVER found a homemade chicken noodle soup better than this one. SO - the recipe of course, I will share below. I do have to plan dinner for this weekend. And I feel kinda like baking. Chocolate revel bars? I had a craving last night for mint chocolate ship pie. anyone know any good recipes? Ok, outta here for the day, watch for new recipes!!! They are scrumdiddlyumscious!
Grandma Mary's Homemade Chicken Noodle Soup
This is a throw together recipe. that means I don't do a lot of measuring. I eyeball everything. Good luck!
Ingredients:
Leftover chicken or 2-3 chicken breasts, cooked and diced
Chicken broth or stock
Water
Celery, diced
carrots, diced
onions, diced
I use about 2-3 containers of chicken broth, the big cartons. Add some water. Throw the chicken in and veggies. While that is heating up, you want to add your seasonings. Thyme, Rosemary, Dill, salt and pepper. Try a tsp of each and see hwo it tastes to you. I do have actual measurements in the recipe I have written down and I believe 1 tsp is correct but again, I don't measure much.
Boil soup and let simmer for a couple of hours. Oh yes - before you let it simmer, add noodles. egg noodles work best. I cook them ahead of time, halfway through. Otherwise they tend to get mushy and mushy noodles suck.
